Oxtail - straight from the farm. It's tough, so it needs a long cooking time. We do ours in a cast-iron pot in a Dutch Oven.

A hint of sweet, balanced with a sour tang. This is done by adding chutney and slices of lime to the pot. Then we cook it for 6 hours! What else is in the pot? Potatoes in jacket, Baby Carrots, Juice of 1 Orange & grated Orange Peel, Tomato, Onion, Basil and Origanum.

An old South African Favourite. Bobotie has its origins in Cape Malay cooking. Seemingly a simple dish - very mildly flavoured curried mince, topped with an "omelette". But it's much more than that. All that can be said is: "Try it, you'll like it"

Our Roast is either Topside, Prime Rib or Silverside. Garlic spears are inserted into the meat and a herb % olive oil paste is patted down. This is slow-roasted for 6 hours in a wood-fired oven. You can't beat the taste!
